Palak-dal khichri

Khichri is a one pot meal with rice and lentils cooked together. It is a very popular dish in Indian cuisine and is cooked in almost all North Indian households with little variations. Khichri is considered as best food for people who are suffering from any kind of illness as khichri is very light and can be digested very easily. This is a high protein diet and is a complete meal for infants and toddlers too when loaded with some vegetables.
In India, festival of Makar Sankrati is also known as "Khichri" as eating khichdi is especially prevalent on this day.
I always keep changing the quantity of Dal and rice, adding/removing some vegetables, sometimes temper with ginger garlic, some times plain with cumin seeds only and so on. Here, I am sharing one of the versions of tempting khichri which I do with Palak/spinach.

Heat mustard oil in a pressure cooker, add cumin seeds and asafoetida, let it crackle. Add chopped spinach, saute for 2 minutes on medium to high flame. It will start leaving the water. Add chopped tomatoes and cook for another 2 minutes.

Add rice and Dal mix. Mix properly, add turmeric powder and salt. Add 2 cups of water. Close the lid and wait for 2 whistles on medium flame.

Serve hot adding ghee on top of khichri, with lemon pickle and papad.
