Absolutely rocking dish from the State Of Gujarat. Perfect and spongy Dhoklas can be made right in the comfort of your homes. Traditionally this is made by soaking Bengal Gram or Chana Daal and grinding it to a smooth batter and then leave it to ferment overnight. Then next day the batter is spiced up and then steamed. Here it is an instantly done version of it which is quick enough to whip up due to the use of Eno Fruit Salt. A perfect breakfast idea for the entire family. And the best part is that it's made pretty much quickly. Enjoy these as it is or with any Chutney of your choice. I usually serve this with Green Coriander and Mint Chutney. These can be made effortlessly at home even by the beginners. Citric Acid gives it a nice suppleness and if it's unavailable, you can very well use our good old Lemon juice. It's perfectly okay. Citric Acid is not difficult to get and is available at every Supermarket or Hypermarkets.

Ingredients

15-20 minutes
6-7 servings
  • 2 cupsGram Flour or Besan
  • 1 tspSalt
  • 1 tbspGinger grated
  • 1/4 tspTurmeric powder optional
  • 3-4Green Chillies finely chopped
  • 1 tbspLemon juice
  • 1/2 cupCurd
  • 1small bunch Coriander Leaves finely chopped
  • 1/8 tspAsafoetida
  • 1 sachetEno
  • 1 1/2 tbspOil
  • FOR THE TEMPERING -
  • 2 tbspOil
  • 1 tbspMustard Seeds
  • 2 SprigsCurry Leaves
  • 1/2 cupCoconut grated
  • 3-4Dry Red Chillies
  • 1 tbspSesame Seeds

Steps

15-20 minutes
  1. 1

    Make a thick batter using all the ingredients except the tempering and topping ones. Grease the plates of the Dhokla maker.

  2. 2

    Just before steaming, add Eno and mix lightly. Pour in the plates and steam on high for 15 minutes. Check with a fork to see if it is done. After cooling down a bit, cut them into desired shapes.

    Top it up with the tempering and garnish with lots of grated Coconut and chopped Coriander Leaves. Serve hot with Chutney of your choice.
