Vegetables Vermicelli upma
Steps

Firstly in a pan, heat 2 tsp of ghee, than add vermicelli and roast it until light brown, then take it out on a plate and keep it aside.

Now heat remaining ghee in same pan, then add mustard seeds and allow it to crackle, after that add chopped green chilies and curry leaves, fry for few seconds on
medium flam. - 3
Now add chopped potato and salt, fry until it soft, then add chopped capsicum and chopped tomato and sauté it on high flam for a minute.

Now add turmeric powder, coriander powder and red chilli powder, mix it well and sauté for a minute, then add 2 cups of water and bring it to boil.

When water is boil well, then add lemon juice and roasted vermicelli, and mix it well, now cover it and cook it on low flam.

Once vermicelli absorb water, then switch off the gas and leave it for few minutes, then fluff it up using a spoon.

Vegetables Vaermicelli upma is reddy to eat, serve with chutney, curd and pickle.
