Steps

Boil water in a large pot and add salt and cauliflower and cook on a medium flame for 5 to 7 minutes or till the cauliflower is half-cooked. Drain and keep aside.

Grind all the ingredients onion, dry coriander seeds, Cumin seeds, almonds, garlic, ginger, cardamom, cloves, cinnamon stick, turmeric powder and red chilli powder and make into a smooth paste, add very little water if required. Keep aside.

Heat the ghee in a deep non-stick pan, add cloves, cardamoms and the onions and sauté on a high flame for 3 to 4 minutes or till they turn translucent.Add sugar and mix.

Add the prepared paste and sauté on a medium flame for 4 to 5 minutes.

Now grind a large tomato and add in the pan and sauté for 2 minutes

Next add curd, salt and give a good mix and boil 2 minutes on the medium flame. while stirring continuously.

Add the cauliflower and mix. Cook again 3-4 minutes. While stirring occasionally.

Switch off the flame and add cream and mix well.

Transfer into the serving bowl. Serve hot shahi gobhi with hot chapati or paratha.
