These are delicious and nutritious, perfect for breakfast or as an afternoon snack with coffee.

In a pot of boiling water over medium heat, add the plantains cut in half with the peel on. Cook for 5 minutes; they should not be too soft.

Remove the plantains from the pot, peel them, and let them cool in a bowl. Once cooled, mash them into a puree. Add the vanilla extract and knead the mixture, then form into small balls.

Place one ball on a flat surface and press or flatten it into a circle. Add some cheese in the center, fold to close, and fry in a skillet with oil over medium heat on both sides until golden. Serve warm.
