  1. FOR PURI:
  2. 1 cuprava/soji
  3. 2tbsmaida/ plain flour
  4. 3tsp oil
  5. 1/4 cuphot water
  6. Oil for frying
  7. FOR GREEN WATER:
  8. 1/4 cupmint/pudina
  9. 1/2 cupcoriander
  10. 1 inchginger
  11. 2green chilli
  12. 1small gosseberry size tamarind
  13. 1tsp chat masala
  14. 1tsp cumin powder
  15. 1 pinchhing/asofoetida
  16. 3/4tsp salt
  17. 4 cupcold water
  18. FOR BROWN WATER(OPTIONAL)
  19. 1 cuptamarind extract
  20. 3tsp jaggery
  21. 1tsp chaat masala
  22. 1tspcumin powder
  23. 1/4tsp pepper powder
  24. 1/4tsp chilli powder
  25. 1 pinchhing/asofoetida
  26. 3/4tspn salt
  27. 3 cupcold water
  28. masala stuffing
  29. 3potato/aloo, boiled & mashed
  30. 1/2onion, finely Chopped
  31. 2tsp finely chopped coriander leaves
  32. 1/2tsp cumin powder
  33. 1/2tsp chaat masala
  34. 1/4tsp pepper powder
  35. 1/2tspchilli powder
  36. 1/2tsp salt
  37. FOR SERVING:
  38. 2tsp bhoondi(optional)

    In a large bowl take 1 cup rava and 2 tspn maida. Add 3 tspn oil and mix well. Now take 1/4 cup hot water and form the dough. Cover the dough and rest for 20 mins.

    Now, pinch a very small sized ball dough and roll and flatten until it's thin. Deep fry in oil in medium flame and flip the puri once after it's puffs up.

    Take a blender and put 1/4 cup mint, 1/2 cup coriander, 1 inch ginger, 2 chilli and a ball sized tamarind.Blend to smooth paste.Add water accordingly to make a paste.

    For masala, take a bowl and add 3 mashed potatoes, 1/2 onions, 2 tspn coriander to it.Add 1/2 tspn cumin powder,1/4 tspn chaat masala,1/4 tspn pepper powder, 1/2 tspn chilli powder and 1/2 tspn salt.Mix everything well and stuffing is ready.

    Pani puri receipt is ready to serve with bhoondi.
