Hyderabadi Chhole

A super quick recipe that goes well with Puris in Hyderabadi style. An excellent option for a scrumptious and healthy treat at tea-time or for Snacking. This can be eaten on it's own or even with Bhature. Either ways, it's definitely delicious. In this style both Tomatoes and Tamarind pulp is used with Potatoes added or sometimes even without them. This version of mine has no Potatoes. I had made Wheat Flour or Aata Bhature to go with this. And it can be relished at Breakfast too with your families and friends.

Steps
- 1
Wash and soak Chickpeas in enough water overnight. Pressure cook them with some Salt, Water and Turmeric powder for 7-8 whistles. Let the pressure settle down completely before opening the lid.
- 2
In a pan, heat Ghee or Oil, preferably Ghee. Saute Onions with Ginger garlic paste added. Fry until they are light pinkish in colour and the raw smell fades away. Now add the chopped Tomatoes and Green Chillies along with the rest of the spices. Cook on a low heat until done with the lid on. The Onions, Tomatoes and Green Chillies can be stir fried a little in Ghee for a couple of minutes and then blended into a smooth paste.
- 3
Then this paste also can be added to the pan along with the boiled Chickpeas. It can be cooked this way too. After the Tomatoes are soft and mushy and everything gets cooked well, adjust Salt and garnish with freshly chopped Coriander Leaves. Enjoy!
