Ingredients

5-6servings
  • 2 cupsflour
  • 2tspn baking powder
  • 3/4 cupsoy milk
  • 2eggs
  • 1/2 cupmargarine
  • 1/2 cupsugar (as per your taste buds)
  • 1 tbspfreshly squeezed lemon juice
  • 1tspn lemon essence

    Sift flour and baking powder.

  2. 2

    Whisk sugar, essence, margarine and eggs then add the flour mixture alternating with soy milk.

  3. 3

    Mix together to form a consistent runny butter. Add lemon juice and some raisins (optional).

  4. 4

    Pour the mixture in a greased baking tin and bake in a preheated oven for 35min.

  5. 5

    Enjoy.
