Ingredients

  • 3/4 cupplain flour or spelt flour
  • 1/2 cupmillet flour (juwar) can omit
  • 3/4 cupchick pea flour
  • 2 teaspooncoarse black pepper
  • 1 teaspoonsea salt
  • 1 teaspoonturmeric
  • 1/2 teaspoonred chilli powder or to taste
  • 1.5 teaspooncoriander, crushed
  • 1 teaspooncumin seeds
  • 1 teaspoonajwain seeds
  • 1/2 teaspooncumin powder
  • 1 teaspoonlemon juice
  • 2 teaspoonginger, minced
  • 4green chillis, minced
  • Handfulcoriander, chopped
  • Rapeseed oil to fry
  • 1/2 teaspoonbicarbonate soda
  • Thinly sliced potatoes or vegetables of choice

Steps

  1. 1

    Mix all the ingredients together with cold water into a smooth batter

  2. 2

    Heat the oil

  3. 3

    Once hot, add 2 teaspoons of the oil to the batter and mix in the bicarbonate of soda until a froth forms on top

  4. 4

    Dip each slice of potato into the batter and carefully lower into the oil turning frequently ensuring the potato cooks thoroughly on a medium heat

  5. 5

    Serve with a coriander dip, as per previous post. Add Greek yogurt, a little cumin powder and salt to taste and stir into a dip texture

  6. 6
