Without using eggs , bake a cake , now being a part of my habit as most people of my family preferred.

To bake an eggless vanilla sponge cake I used plain curd , baking soda and baking powder. Plain curd reacts with baking soda to make the vanilla cake spongy.

Ingredients

30 mins
4 servings
  • 1and 1/2 cup all purpose flour(maida)
  • 1 cupcurd
  • 3/4 cupsugar
  • 1/2 tspbaking soda
  • 1 tspbaking powder
  • 1/2 cupcooking oil (neutral smell)
  • 1 tspvanilla extract/essence
  • 1 pinchsalt

Steps

  1. 1

    Take 6 inches rectangular baking tin. Grease with oil. Dust maida evenly on the cake tin and discard extra amount of maida

  2. 2

    Shift maida to a bowl.
    In another mixing bowl, take curd and sugar. Mix well with whisker. Then mix baking powder and soda

  3. 3

    Mix well and rest for 5 minutes,till the bubbles come, due to curd and soda reaction.

  4. 4

    Take oil, vanilla extract and shifted flour.
    Mix well using wire whisk or spatula.

  5. 5

    Fold nicely to a smooth batter. Spread the cake batter in greased tin. Tap twice to remove air bubbles.

  6. 6

    Bake in a kadhai for 30-35 minutes on heat. Check with a toothpick.

  7. 7

    De-mold when cool. You may garnish with chocolate gnash/nutella and nuts.
