Bring to boil the ribs with water until the then rinse out. Boil the ribs again with fresh water. Add bay leaves and kaffir lime leaves. Cook until the ribs tender and set a side and keep the beef stock.

Grind all the spice ingredients using a food processor. Put a bit of oil to loosen the texture. Put a side.

Heat oil in a pot. Sauté the spice paste, sliced kaffir lime leaves, pandan leaves and lemongrass until fragrant.

Add pork ribs. Add salt, sugar and beef stock. Bring to boil and continue cooking until a bit absorbed. And keep stirring it. Adjust salt and sugar as needed.

Add tomato and sliced spring onions. Stir it for about a minute.

Turn off the heat, transfer to a serving bowl and serve with steamed rice.
