Khaman Dhokla(Besan Dhokla)

Take a bowl and mix besan and rava suji. Add salt and sugar, turmeri, hing, lemon juice and ginger chilli paste to the mix.

Mix the ingredients in the bowl with warm water till the mixture turns into a thick but consistent batter. Their should not be any lump.

Meanwhile, boil water in a pressure cooker with a small tawa stand placed in it so that the dhokla pan will stand on that. And prepare a pan greased with oil or butter in which we will put the batter and into the cooker.

Add eno or fruit salt into the batter and mix it fast so that the batter turns frothy and thick and the mix increases to almost double the amount it was.

Now, bring the greased pan and pour the batter into the pan. Tap it a little on ground so the batter sits smoothly throughout.

Put the pan into the cooker and put the lid on. Remove the whistle so air can come out of the cooker through that.

Put the cooker on medium flame for 15-20 mins.

Wait for the lid to open and take the dhokla pan out.

Once the pan gets cooled off a bit, turn it upside down on a plate for the dhokla to come out and sit on the plate.

Heat oil in a pan. Put curry leaves, a bit of sugar and salt, and a pinch of hing to it.

Fry the ingredients a bit and then pour it on the dhokla and serve it Hot!!!
