For the sauce: Mix miso paste, chili sauce, and soy sauce in a 1:2:1 ratio. If you like it sweeter (like in Tainan), add sugar to taste. Bring the mixture to a boil on the stove.

For the batter: Mix sweet potato starch and water in a 1:3 ratio. For a crispier texture, add a little all-purpose flour.

Heat oil in a skillet. When hot, add the oysters. After 10 seconds, pour in the batter, top with baby bok choy, and crack in the eggs.

When the bottom of the batter starts to set, flip the omelet.

Once both sides are cooked through, remove from the pan and drizzle with the sauce.
