This is my first time I’m trying different dishes with Mangoes.. So I tried this Mango loaf cake which everyone is loving.. as it has a hint of tanginess of lime and the coconut touch to mango always is a plus point to it..
You can replace lime with lemon or orange or even peaches..

Steps

Lay a parchment paper in a non-stick loaf pan and pre heat the oven at 350 degrees.

Meanwhile in a separate bowl add the dry ingredients and mix.

In a big mixing bowl add sugar and butter and beat on high speed till light and fluffy. (just 2 mins, do not over beat)

Now add the egg and beat till egg is incorporated.

Now mix coconut milk, lime juice, lime zest and mango purée in a separate bowl.

Add half of the dry and half wet ingredients in the batter and beat on high speed till everything is incorporated. Repeat with the other halves.

Now you can add chopped almonds and mix roughly with a spatula.

Pour the batter into the loaf tray and give a tap or two.

Bake the cake till 50 mins and check if it's done by inserting a tooth pick into the middle of the cake, if the tooth pick comes out clean, the cake is done. Otherwise keep for another 10 mins.

Remove the cake from the oven and allow it to cool for 5-10 mins. Then remove it from the mould.

In a bowl add all the ingredients for the glaze and mix well for 1-2 mins.

Then pour the glaze over the cake and decorate it with lime slices and a few mango chunks.

Serve with tea or coffee.
