What to make for supper. I had cooked chicken. I wanted something cheesy and crispy. These turned out soooo well I’ll be making them in all different flavors. And we were eating hot deliciousness in about 15 minutes. I used my air fryer. You can use your oven too. It’ll just take a little longer.

Ingredients

2 servings
  1. 4 (8 inch)flour tortillas
  2. I jar queso cheese dip
  3. Cooked chicken, cubed or shredded
  4. 1/4 lbsmoked Gouda, shredded
  5. Cooking spray

Cooking Instructions

    Soften tortillas in the micro for about 30 seconds. Down the center of your tortilla, spoon and spread some dip. Add a line of chicken and top with shredded Gouda. Take one end of the tortilla over your filling and pull it in snug towards you, roll it up. Spray both sides with cooking spray and lay it in your air fryer.

    Do the rest the same way. If you have any shredded cheese left, sprinkle over top of your taquitos. Cook for 5 minutes on 335 degrees. Flip them halfway through, respray that side, and continue cooking. We dipped in sour cream. NOW it’s a fiesta!!

I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
