Eggless whole wheat jaggery plum cake

Take dry fruits of your choice.

Chop the dry fruits.

You should get 1 cup of chopped dry fruits. Take 1/2 cup of jaggery.

Add jaggery and water in a saucepan. Melt the jaggery.

Once jaggery is melted, add the chopped dry fruits to it. Stir well for 3 to 4 minutes. Switch off the flame. Allow it to cool completely.

Take 2 imported oranges.

Juice the oranges. It should give you 1/2 cup of fresh juice.

Add the juice to the dry fruit and jaggery mixture. Keep it aside for at least 1 hour. You can keep them soaked for 1 day too. Keep it covered in a cool dry place.

Take butter in a pan.

Melt the butter. Allow it to cool.

Take all spices in a mixer grinder jar.

Powder the spices along with a little sugar.

Prepare a 6 inch cake pan.

Preheat the oven at 180 degree celsius. Add melted butter to a bowl. Take 1/4 cup milk.

Mix milk and butter. Add vanilla essence to it.

Add whole wheat flour slowly to it. Add milk powder. Add the spices too. Mix well.

Add the dry fruit jaggery mixture to it.

Mix well so that a smooth but thick mixture is formed.

Add baking powder and baking soda. Activate it by adding vinegar.

Mix well in one direction. Do not overmix.

Transfer the cake batter to your prepared pan. Tap well.

Decorate the cake.

Bake the cake at 180 degree celcius for around 55 minutes to 1 hour or till a toothpick comes out clean.

Invert the cake. Allow it to cool completely before serving or storing.
