This is very easy to make and is really tasty. I don’t like all vegan cheese but this has a lovely texture and is very similar to a normal feta - a little sharp and sour. Be careful that you don’t overcook, you want to aim for soft and a little a little oozy but it won’t behave exactly like the non-vegan version.’

Ingredients

30 minutes
4 people
  • Vegan Feta
  • 1sprinkle of pink peppercorns
  • Freshly soft cut herbs (dill, Greek oregano, mint)
  • Fresh hard herbs (thyme, bay, rosemary
  • A fewgreen olives
  • A fewblack olives (kalamata are best but any will do)
  • A fewcapers
  • 1-2bay leaves
  • 2drizzles of olive oil
  • 1wedge of lemon

Steps

30 minutes
  1. 1

    Place the feta on baking paper (leaving enough to make a folded envelope. Sprinkle with the peppercorns, olives and herbs and bake in the oven for 200c for 12 minutes.

    Unwrap and add a drizzle of olive oil, the soft herbs and spinach and Return to the oven for a further few minutes

    Enjoy with crusty sourdough bread or sprinkled on top of a salad.
