Ingredients

2 servings
  • For suji vada --
  • 4 cupssuji (semolina)
  • 2 cupscurd
  • 1 tbspgrated ginger
  • 1 tbspgreen chilli finely chopped
  • To tastesalt
  • 1 pinchbaking soda
  • As required oil for frying
  • For dahi bhalla servings --
  • As required curd
  • As per taste green chutney
  • As per taste Sweet tamarind chutney
  • As per tasteRed chilli powder
  • As requiredNamkin sev
  • As per taste salt
  • As per taste chaat masala
  • As per tasteblack salt
  • As per tasteroasted cumin powder
  • As requiredCoriander leaves

Steps

30 to 40 min
  1. 1

    PREPARING THE VADA:- Take a bowl and add semolina/suji, little curd at a time to make a thick batter. Add grated ginger and finely chopped green chilli. Mix well. Add little and curd to adjust the consistency. The batter should be of thick consistency. Rest the batter for 10 minutes.

    Now, heat oil for frying.Add baking soda to the batter and mix well. Make round vada out the batter and fry it in the hot oil.

    Keep the flame low-medium while frying. Once the vada turns nice golden brown from all the sides, take them out on a tissue paper.
    Soak the fried vada in water for few seconds. Then squeeze the water.

    SERVING:- Take a serving plate, place the vada.Pout sweetened curd, then green chutney and sweet tamarind chutney.

    Sprinkle salt, black salt, chaat masala, red chilli powder. Garnish it with chopped coriander leaves.
