Green Mutton Gravy or Ambada and Chukka Gosht

Ambada means Red Sorrel Leaves and Chukka means Green Sorrel Leaves in Hyderabadi language. And here in this recipe, which is my innovative try, I have combined both these Greens with Mutton Bone-in for a delicious treat to the tastebuds. Serve it either with Rotis or Rice. It goes well with any of it. Do scroll through the recipe and try it for your families if you like it. In Hyderabad we make these two Greens but separately. In this particular recipe, I have made a fusion with both the Greens that are easily available in the Indian markets through out the year.

Ingredients

30 minutes
5-6 servings
  • 4 bunchesRed Sorrel Leaves
  • 4-5 bunchesGreen Sorrel Leaves
  • 2 tspGinger garlic paste
  • 1 tspRed Chilli powder
  • 3-4Green Chillies slit or chopped
  • 2 tspSalt or to taste
  • 500 gmMutton Bone-in
  • 3Onions finely chopped
  • 1 tspCumin powder
  • 1/4 tspTurmeric powder
  • 3 tbspOil
  • 1small bunch Coriander Leaves chopped

Steps

    Wash and roughly chop the Greens and set aside. In a pressure cooker, saute Onions with Ginger garlic paste, Green Chillies and the rest of the spices. Also add Mutton Bone-in too. Cover and cook for about 3-4 minutes on a low heat.

    Now add a cup or two of water and pressure cook for about 6-7 whistles or as required. Let the pressure settle down fully before opening the lid. Now add the Greens. Increase the heat to a high now. Adjust Salt and roast it well.

    The gravy is usually semi thick. So keep in mind this consistency. Garnish with chopped Coriander Leaves. Serve it hot alongside Rice or Rotis. Yum!
