This dry rub is great on pork, chicken, and even burgers!
For smoked or grilled meats, the sugars release moisture and caramelize to form a nice bark with a slight wetness... no need for BBQ sauce!

Ingredients

Prep: 10 minutes
  1. 1/2 cupBrown Sugar (packed)
  2. 1/2 cupGranulated Sugar
  3. 1/2 cupCoarse Kosher Salt
  4. 2heaping Tbs. smoked paprika (regular paprika works too)
  5. 1heaping Tbs. onion powder
  6. 1 Tbsgarlic powder
  7. 1 Tbsground black pepper
  8. 1 tsporegano
  9. 1 tspground coriander
  10. 1/2 tspancho Chile pepper
  11. 1/4 tspcayenne pepper
  12. 2 Tbscornstarch (helps reduce caking)

Cooking Instructions

Prep: 10 minutes

    Blend all ingredients together thoroughly in a bowl or food processor. Make sure to break apart any clumps of brown sugar.

    Store in airtight container.

    For use on chicken or pork loin: sprinkle generously over meat as you would with a seasoning mix... Careful not to over do it.

    For ribs: pat ribs dry with paper towel. Generously coat all sides.

  5. 5

    For BBQ burgers, sprinkle on as a seasoning, or blend into the meat before making patties
