I whipped up this classic for lunch and thought I might save how I did it. Enjoy!
Steps

Mix the breading mix ingredients into a suitable dish

Whisk the eggs in a small bowl until the whites and yolks are mixed into a watery paste.

Mix the spice rub ingredients together in a bowl.

Take your chicken breast and cut it into smaller pieces. I cut mine into somewhat thin strips, thick enough to not be overwhelmed by the breading, but thin enough to cook fast in the fry oil.

Dip the cut chicken pieces individually into the egg wash and then into the breading mix. Cover the pieces entirely in the mix and make sure that they don't have any exposed egg wash. Place them to the side to allow them to dry while you prep your oil.

Fill a saucepan with your cooking oil and set it to medium high. Within a few minutes, it should be ready to fry your chicken. Be careful though not to spill any oil onto your stovetop as it is very flammable and will cause a fire with enough contact.

Once your oil is ready, carefully place a few breaded chicken pieces into the oil and let them fry for about three minutes, checking constantly to make sure they aren't popping out of the oil.

Once they look done, take the thickest piece and cut it in it's thickest place. If it's white, your chicken is done.

Plate up and enjoy!
