Tacos al Pastor

Tacos al pastor are traditional throughout Mexico, although they originate from Mexico City. Personally, they are my favorite. Marinated with chili, orange juice, spices, and pineapple. A delight.

Tacos al pastor are traditional throughout Mexico, although they originate from Mexico City. Personally, they are my favorite. Marinated with chili, orange juice, spices, and pineapple. A delight.
Steps

In a blender, combine orange juice, salt, cumin, cinnamon, and oil. Blend well and add to the meat, letting it marinate for at least 2 hours.

Peel the pineapple and cut into thick circles, then skewer with the bamboo skewers.

Start skewering the meat onto the skewers, alternating with pieces of onion. Continue until all the meat is used.

Place in a somewhat deep baking tray in the oven.

Cover with aluminum foil and bake for about 50 minutes at 350°F. Check that the meat is well-cooked and browned.

Remove from the oven, slice, and serve.

Make tacos, sprinkle with cilantro, onion, and taco sauce.
