Firstly to prepare the pakora mix all the ingredients mentioned for pakoras and make a thick batter.

Fry these in the form of round pakoras in hot mustard oil.

Keep these aside.

Now let’s prepare the kadi. Put mustard oil in a kadai and let it burn.

Turn off the flame and add dry masala ingredients (fenugreek,coriander seeds, ajwain, asofodia, cumin,dried red chillies) and let them splutter.

In a separate bowl add yoghurt, besan, salt,red chillie,turmeric powder,garam masala and blend it with a hand blender.

Add this mixture into the kadai with 2 cups of water.

Switch on the flame and keep stirring till a boil.

Let it simmer and cook for around 1 hour. Keep stirring in between.

Now time to add the pakoras.

Let it boil for another 15-20minutes.

Make a tarka in a pan with desi ghee and red chillies.

Put tarka over the kadi.Also sprinkle some fresh coriander according to choice.

Serve with steamed rice and chopped onions.
