A sweet from the kokan region made with the goodness of coconut milk, rice and cardamom. Simple to make and delicious is taste.
Steps

Soak the rice in water overnight. Wash and drain the rice. Grind the coconut with 3 cups water and remove the milk from it. Set aside.

In a blender take the rice, milk powder, coconut milk powder, cardamom powder and the coconut milk. Grind to a smooth paste. Now add the yeast and pulse a few times to incorporate. Remove in a vessel and let it sit covered for 30 minutes.

Once the mixture is fermented add the add the sugar and mix well.

Grease the paniyaram pan with oil and pour some batter into each cavity. Cook till the underside is golden and then flip. Pour drops of oil from the side so that the other side gets cooked well. Enjoy warm.
