Coconut Pancake is an ideal snack for kids and adults. Can be enjoyed in the afternoon or anytime snack.
Steps

To make the pancake batter - in a bowl add a egg and beat, add flour and whisk. Add milk and water gradually and keep stirring. Add melted butter and stir. Add pepper and salt and stir well.

For the coconut filling - in a pan add grated coconut and add castor sugar. Stir to dissolve the sugar and add a drop of food colour. Stir and set aside.

In a non-stick pan add butter and add one ladle of the batter. Spread all across the pan. On low flame cook the pancake but don’t flip sides. Set aside after 2-3 mins. Complete the batches

To assemble add the coconut filling in the pancake. Roll and it’s ready to eat
