Savoury Rice Pudding

I had a whole bunch of leftover food that I was sick of, so instead of throwing it away, I remembered a time in childhood that I made a 'rice pizza' for a potluck. I basically just swapped out the pizza base: instead of a flour dough, I used rice, packed it up then put on the pizza toppings. I remember people loving it a lot. So I said why not? I won't lose anything by trying. Long story short, it is one of the most delicious things I have made so far. I couldn't get enough of it! What put it over the top is the crust that formed on the top when I baked it. Note, this is not a rice pizza like in my story but rice mixed with other leftovers, binder added, then baked. So from several leftovers that I wanted to dump, I now have a go to snack that will last me at least a week (they are delicious as a cold snack, so refrigerated). You can also add this to your portfolio of regular rice dishes you serve at meal time to beat the monotony - a very good competitor for pilau. It can also be a stand-alone meal - no need for stew or gravy, as you can incorporate all your food groups, including vegetables, into it. I will not put in quantities because this is a 'soul meal', from the heart, so it needs one to use their instincts, what I call cooking-by-instinct.

Ingredients

1 hr
infinite
  • Cooked rice (mixture of white and brown is better for texture)
  • Flavourful stew, gravy, sofrito, etc. Garlicky flavor desirable
  • Binder eg egg, flour, bread, chia, etc. I used savory cookies
  • Flavourful oil. I used rosemary-infused oil
  • (Optional) Flavour enhancers eg cheese, cream, sauces, etc

Steps

  1. 1

    Make sure your seasonings are correct.

  2. 2

    Spread the oil on a flat oven tray. This is to form a crust at the bottom and prevent sticking.

  3. 3

    Mix up your ingredients well, spread on your tray, and put in the oven at high heat until a good crust is formed.

  4. 4

    Serve. You can also consider using toppings like in pizza.
