Heat up vegetable oil add your ginger/garlic paste and your onions let saute then add your rice which you have washed soaked for 30 mins and drained and stir fry for 5-7 minutes to avoid burning

Use a silver colander and drain the excess oil from the rice

Heat some butter and some oil stir fry your sausage, cooked kidney, peas add in your scotch bonnet pepper your seasonings curry powder and tumeric then your rice goes in add the chicken stock and moderate amount of water to cook your rice cover with foil paper and let cook,

When it's almost done you can add your carrots and sweet corn and green peppers cover up for 1 minute and you're good to go,I served with my left over grilled chicken
