Coconut milk potato stew is so easy to prepare and best side dish for appam, idiyappam and also with rice. Usually prepared in kerala. I learned this recipe from my aunt. This stew is prepared using coconut milk. Coriander seeds, red chili is dry rosted and powdered with roasted gram. This dry powder gives an nice aroma and enhances the stew's taste. We can grind shredded coconut along with ingredients given under dry roast instead of using coconut milk. But adding coconut milk to this stew is my choice. If we want we can also add whole garam masala or garam masala powder to this potato stew.

Steps

Boil potatoes. Peel the skin & cut it pieces.

Grind the shredded coconut by adding water and extract the coconut milk.Repeat the process another time & extract 2nd milk.

Dry roast coriander seeds and red chili. Grind it with roasted gram to a coarse powder.

Heat kadai. Add slitted green chili, sliced onions and saute it till the colour changes. Add little water and cook onions till it becomes soft.

Add sauted and cooked onions, dry powder and boiled potatoes to secondly extracted coconut milk. Leave it to boil. After it starts to boil add firstly extracted coconut milk. Don't leave it to boil.

Switch off the flame immediately after adding the 1st extracted coconut milk.Garnish with coriander leaves. This goes well with aapam or dosai.
