Chop all the ingredients except the eggs and a few shrimp, which you’ll save for decoration. Mix everything with cocktail sauce until the filling is moist.

Lay out the sponge cake sheet (cut it in half if it’s too large).

Spread cocktail sauce evenly over the cake, then add the seafood filling, spreading it out in an even layer. Chop the hard-boiled eggs on top, saving one for decoration.

Carefully roll up the cake, using the parchment or cardboard underneath to help. Cover the roll with cocktail sauce (you can mix in a little mayonnaise if you like). Grate one hard-boiled egg over the top.

Finish by placing the reserved shrimp on top and decorating with your choice of lettuce, black olives, shredded carrot, pimentos, etc.
