Ingredients: 350 g drained pumpkin puree (I used thawed puree); 225 g Spelt flour wholemeal/ wholemeal plain flour (I used mix); 2 tsp Baking powder; 100 g Raisins; 70 g Mixed seeds; 125 ml olive oil; 2 eggs lightly beaten; 1 tsp mixed spice; 1/2 tsp sea salt fine; 4 tbspn natural yogurt; 2 tbspn maple syrup; 1 teaspoon vanilla essence

It is based in one recipe from one of my waitrose magazines. I am always on the lookout for recipes to use up pumpkin as I grew plenty last year and still some of it is in my freezer. This makes a filling breakfast and an energizing midmorning snack without the sugar or butter.

350 gdrained pumpkin puree (I used thawed puree)
225 gSpelt flour wholemeal/ wholemeal plain flour (I used mix)
2 tspBaking powder
100 gRaisins
70 gMixed seeds
125 mlolive oil
2eggs lightly beaten
1 tspmixed spice
1/2 tspsea salt fine
4 tbspnnatural yogurt
2 tbspnmaple syrup
1 teaspoonvanilla essence

Mix pumpkin, olive oil, spices, salt, eggs. Fold in the flour and baking powder

Finally add yogurt, maple syrup, raisins and vanilla essence

Divide mixture among 12 muffin cases and sprinkle with some seeds.

Bake at 180°C for 20-25 minutes
