Ingredients

30 minutes
4 people
  • 1 cupUrad Dal (black gram lentils without skin)
  • 1/2 tablespooncrushed Ginger-Green Chilli, optional
  • As neededOil, for deep frying,
  • 4 cups lukewarm Water,
  • to tasteSalt
  • 3½ cups Curd (yogurt)
  • 3 tablespoons Powdered Sugar or to taste (optional)
  • 2 tablespoons Roasted Cumin Powder,
  • 1 tbsp Black Pepper Powder
  • 1/4 cup finely chopped Coriander Leaves
  • 1/4 cup sweet date & tamarind chutney

Steps

30 minutes
  1. 1

    Soak the urad dal overnight or for at least 4-5 hours. Drain them.

  2. 2

    Grind the urad dal, green chilies, ginger, cumin and asafoetida with little water to a smooth fluffy batter.

  3. 3

    Heat oil for deep frying. Either drop the batter with your hands or with a spoon in medium hot oil. Fry the vada in batches till crisp and golden.

    Drain the vada on paper towels.

  5. 5

    When they are still warm, add the vada in water and let them soak for 18-20 minutes.

  6. 6

    Press all the soaked vada this way and keep them aside in a plate.Pour the beaten curd. Pour the green chutney and sweet tamarind chutney

    Sprinkle with red chili powder, roasted cumin powder, chaat masala and black salt.

    Garnish with coriander leaves,pomegranate & sev optional& then Serve dahi vada immediately or you can refrigerate and then serve them.
