Aloo ka achaar/ Piro Sadeko Aloo

Aloo ka achaar or Aloo ko achaar is a Nepali Style Fresh Potato preparation with sesame ...which is more delicious in the winter with the seasonal new baby potatoes and more seasonal vegetables like carrot, radish and fresh peas added into it. Make it few hours before having it or a day ahead and keep in the fridge for the flavours to infuse. If kept in the fridge (without temperature fluctuation of the achaar) it last for 2-3 days. You can simply serve it in lunch and dinner along with main course or serve it as a starter/ appetizer, I love to have it with Poha Chivda/ flattened rice and Sel roti too.

Prepare the ingredients / vegetables as mentioned above. Put everything in a steel or porcelain bowl. Add little lemon juice and salt and adjust later on when you finally mix everything after the tempering.

Dry roast the sesame seeds and poppy seeds (if using),it hardly takes 2-3 minutes on medium low flame,do not over brown it, cool for few minutes and grind it into a fine powder and add into the bowl with other ingredients.

Heat mustard oil in a pan and add Methi once it crackles pour it on top of portion of the turmeric and chilli powder and ginger paste, in this way it gets cooked with the heat of the hot oil. Now mix everything thoroughly but with gentle hands....check salt and tanginess if required add salt and lemon juice. Your Aloo ka achaar or Aloo ko achaar is ready. Bon Appetit!!!
