Navratan pulao 🥰

Bring a large pot of water to boil, lightly salt it, then add the rice and cook. Drain and set aside.

Mix the saffron with warm milk and set aside.

Heat 2 tbsp ghee. Add the cardamoms, cloves, cinnamon, bay leaf and cumin seeds. Stir-fry until the spices release their fragrance and begin to turn color.

Now add onion cauliflower, saute for 2-3 minutes, then add the carrots and saute for another 2-3 minutes. Add the capsicum and green peas, green chillies and saute for a couple of minutes. then add some salt.

Cover and cook for 5 minutes, until vegetables are cooked well.

Further add 3 cup cooked rice,1/2 tsp salt and mix gently.

In a tawa, heat 2 tbsp ghee and cashew, badam, raisins, pista, cubes paneer.

Roast on low flame until it turns golden brown.

Add in roasted nuts over rice.

Pour 2 tbsp saffron milk spreading uniformly.

Cover and simmer for 10 minutes or until flavours are absorbed well.

Finally, enjoy Navratan pulao.
