This is a dish my mom loved to make for me when I was a kid.

Soak the glass noodles and cut them into short pieces. Slice the cabbage, carrots, and mushrooms to prepare the filling. Pound the garlic and black pepper together until fine, then stir-fry with the prepared vegetables. Season to taste with soy sauce and sugar. Let the filling cool.

Prepare the spring roll wrappers for wrapping. Once the filling has cooled, wrap it in the wrappers, using the egg yolk to seal the edges so they don't come apart.

After wrapping, fry the spring rolls until golden brown. Serve immediately.
