Traditional Papas with Pumpkin

Being pumpkin season I thought I'd pick one up. As it was large enough I used it in multiple dishes and roasted the skins and seeds separately.
I made this dish for my son's lunch and it went down a treat. I remember my grandmother used to make the very same when I was his age.

Add the pumpkin and water to a large saucepan and season with a pinch of salt. Cover with lid and steam boil the pumpkin until the water has evaporated and the pumpkin is super soft. Mine took about an hour and I would shake the pan often to avoid the pumpkin sticking and to stop the steam escaping avoided lifting the lid as much as possible.

Using a blender, blend the pumpkin until smooth.

Return to a medium-low heat and add the butter, sugar and flour. Gently simmer stirring often for 5 minutes.

Allow to rest for 10 minutes. Serve sprinkled with cinnamon to taste.
