November 1st marks MY start of the holiday season. We start with Thanksgiving, then Christmas, and end with New Years. This is a treat I usually only make at the holidays. I live for this season!! Here’s my kick off!🎄🍪

Cooking Instructions

Preheat oven to 325. Line baking sheets with parchment paper. Beat butter til light and add 2/3 cup powdered sugar. Beat well. Add nuts, salt, and vanilla and beat well.

Add flour a cup at a time and mix until well combined. I use a small cookie scoop. Roll into 1-2 inch balls and place on parchment. Bake 15 minutes, no browning. Let cool a minute or two then roll in powdered sugar. Easy peasy.

I make this not just for the Christmas season, but also at other times of the year.It is easy and cute, so my kids bring them as gifts when they visit their friends' houses.It is sweet and delicious.I always use margarine for cake as it is soft to mix and reasonably priced, but of course you can use butter instead.If you have cornstarch, use half cornstarch and half cake flour. These have a light and delicate texture! My family has been using this recipe for 20 years. We make them often during the Christmas season. This is the Mexican style version with pecan nuts. I heard this cookie is given to guests as gifts at Mexican weddings. The name for "snowball cookies" vary depending on the type of nut used. If pecans are used, it's Mexican, and if it's almonds, it's Russian. With walnuts, and with pistachios ... Sorry, I forgot all the names!I use the food processor to chop the nuts. I use my hands to combine the flour with the chopped nuts to prevent lumps. If it is difficult to roll the dough into balls, squeezing them tightly may work. I use whatever nuts are available at home: pecans, walnuts, almonds, etc. There are also recipes with hazelnuts and pistachio. Make delicious cookies with your favorite nuts.
