Cauliflower, potato, and cheese béchamel gratin, very easy to make and can be prepared in advance to save time.

▶️ For the potatoes, you can pre-cook them in boiling salted water, wash, peel, slice, and pre-cook for 10 minutes. My quicker method is using an air fryer for 10 minutes, which saves time and keeps them firm.

For the cauliflower, you can also immerse them in salted water for 15 minutes, or steam for 15 minutes.

Serves 6 to 8 people
  1. 1medium cauliflower
  2. about 14 to 18 oz potatoes (400 to 500 grams)
  3. Béchamel
  4. 3 cupsmilk (700 ml)
  5. 5 tablespoonsbutter (70 grams)
  6. 1/2 cupflour (70 grams)
  7. 2/3 cupEmmental cheese (70 grams)
  8. 1/3 cupParmesan cheese (40 grams)
  9. Salt, pepper, nutmeg

    Wash your vegetables, cut the cauliflower, steam for 15 minutes or immerse in boiling salted water for 15 minutes. Wash and peel your potatoes, pre-cook for 10 minutes in boiling salted water, then slice. Or use my method: slice and cook for 10 minutes in an air fryer.

    Prepare the béchamel: melt the butter, incorporate the flour, then add the milk a little at a time, continue whisking well, add salt, pepper, and nutmeg, let it thicken. Remove 1 or 2 ladles of béchamel and pour into the bottom of the gratin dish. Continue with the béchamel, add the cheese, stir a bit, and it's ready.

    Preheat the oven to 350°F (180°C). In a gratin dish: ✔️ 1 layer of béchamel ✔️ 1 layer of potatoes ✔️ 1 layer of béchamel/cheese
