Mix the flour, salt, almond flour, sugar, and vanilla sugar together. Add the softened butter, cut into pieces. Work the mixture until it becomes crumbly.

Make a well in the center. Add the eggs and knead until you have a smooth dough (do not overwork it). Shape into a ball, flatten it, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.

Preheat the oven to 350°F (180°C) with convection if possible. Roll out the dough to about 1/8 inch (3 mm) thick and cut out circles about 2 to 2 1/2 inches (5 to 6 cm) in diameter. Place half a teaspoon of jam in the center of each circle. Lift up three sides at regular intervals and pinch them together with your fingers to seal.

Place the shapes on a baking sheet lined with parchment paper and bake for about 15 minutes. When done, let them cool on a wire rack.
