Cooking Instructions

First, wash and clean the spinach thoroughly.

In a pot, add 1 cup water (240 ml), 1 teaspoon sugar, and a little salt. Bring to a boil. Add the spinach, green chilies (broken into pieces), and onion (sliced). Boil for just 5 to 7 minutes, until the onion turns translucent. Do not overcook.

Let it cool slightly, then transfer to a blender and blend into a paste. Save the leftover water to use later.

Heat 1 tablespoon oil in a skillet. Add cumin seeds, bay leaves, cloves, and 1 teaspoon ginger paste. Sauté for 1 minute. Add the blended tomato and spinach paste. Cook for 2-3 minutes, then add 1/2 cup water (120 ml) and bring to a boil. Add salt, kadai masala (or curry powder), and garam masala. Mix well and cook for 1 more minute.

Stir in the fresh cream.

Cut the paneer into cubes as desired. Add the paneer cubes to the skillet, cover, and cook for 1-2 minutes. Your delicious palak paneer is ready! Serve with roti or rice.
