In a sauce pan, add mixed dried fruits of your choice along with Star Anise. Add orange juice and hot water in it.

Bring to boil and Let it simmer at low medium flame for 5 minutes and then switch off the gas.

Let it cool down completely. Remove star anise.

This method will ensure that dried fruits are soft and juicy.

Now take two mixing bowl and sieve the flour thrice to incorporate air into it.

Add nutmeg, cinnamon, ginger powder, baking powder and baking soda. Dry mix.

In another bowl, gather liquid ingredients. Add milkmaid, butter and sugar. Beat lightly and make smooth consistency batter.

Add cooled down nuts cooked earlier in it.

Add orange zest and mix.

Combine dry and wet ingredients together and add cake gel. Gently cut and fold.

Lastly add soda. Cut and fold. Dont overmix else cake will be dense.

Line the cake tin with butter paper and pour the batter in it.

Tap lightly.

Preheat the oven for 15 mins at 160

Bake at middle rack for 60 minutes minimum at 160 degree
