Heat oil in a kadhai add cumin seeds mustard seeds urad dal & curry leaves.

Then add chillies and ginger and cook for a minute

Add chopped carrot and cover a lid & cook for 5mins

Then add capsicum n tomato and again cover with a lid n cook for 5mins

Add all the spices except mint powder,cooked rice & mix well

Add mint powder and mix again

Enjoy with curd/raita and papad.
