I had the recipe written down in my notes. I rearranged it and made this recipe.

Sprinkling sugar on the surface gives the cake a crunchy texture on top of the extra sweetness. It's sweet enough from the banana even with just a small amount of sugar It's delicious to mix raisins into the batter or sprinkle them on the surface. You can substitute whole wheat flour with flour. You can use any kind of sugar instead of brown sugar. Raisins are optional. Recipe by Punmitsumutsu

Ingredients

6 servings
  1. 1●Banana
  2. 70 ml●Soy milk
  3. 50 ml●Vegetable oil
  4. 4 tbsp●Brown sugar
  5. 150 grams☆Plain white flour
  6. 50 grams☆Whole wheat flour
  7. 2 tsp☆Baking powder
  8. 1 pinch☆Salt
  9. 1Brown sugar (for sprinkling on top)
  10. 1Raisins

Cooking Instructions

    Add all the ● ingredients, banana, soy milk, vegetable oil, and sugar into a food processor, then blend. Alternatively, mash the banana, and add the soy milk, vegetable oil, and sugar, then mix.

    Add all the ☆ ingredients, and sift in the dry ingredients. Add raisins if you like. Fold them into the batter.

    Pour the batter onto a baking sheet. Alternatively, you can form it into 2 cm thick shapes since the batter is thick and heavy. You can pour it into aluminium cups (muffin cups) as well. Sprinkle sugar on the surface.

    Bake in the oven for 10 minutes at 210℃, and for another 10 minutes at 200℃. If you are using a baking sheet, bake for another 5 minutes, then you're done.
