Place the pressure cooker on the stove and sear the pieces of beef. Add the corn pieces. Sprinkle with a little salt and pepper, then cook for 20 minutes after the valve starts to whistle.

While the beef is cooking, wash and chop the vegetables. Some people like to add green beans, xoconostle, or small masa dumplings—feel free to add your favorites.

In a skillet, sauté the onion, garlic, and guajillo chiles. Don’t let them brown too much. Add water and simmer for 5 minutes. Let them soak for a bit, then blend with the cooking water and bouillon cubes until smooth.

When the beef is done and the pressure has released, carefully open the cooker. Add the strained chile mixture, vegetables, and epazote. Close the cooker and cook for 5 more minutes after the valve starts to whistle.

Check and add more salt if needed.
