There are brioche versions, fruity ones, classic, and reinvented ones, but my favorite is the puff pastry kind.
Steps

Mix the softened butter and sugar together.

Add the almond flour.

Add the eggs.

Flavor with rum and/or vanilla extract.

Roll out the puff pastry and cut out two circles. Or use the two store-bought pastry sheets. Spread the almond cream on the first circle, place a fève (small charm or bean) inside, and cover with the second circle. Seal the edges.

Preheat the oven to 350°F (180°C).

Brush with the egg yolk and create decorative patterns. Chill for 15 minutes, then bake for about 30 minutes.
