My tip for crunchy frying is that there should be plenty of oil in wok to dip the item.do not fry in less oil ,it will not give uniform frying texture.
Steps

Make filling.very finely chop all vegetables.heat oil in pan.saute finely chop onion in oil.add ginger garlic.fry well.add all seasoning

Add all vegetables chopped/ shredded very finely & fry well.add soya sauce.taste & adjust seasoning.filling is ready

Spread roll sheet(I use store bought).place some filling on it.make a paste of maida+water & apply on corners of sheet.then give it shape of roll.apply paste again on folded corners to bind nicely.arrange seprately on tray.you can freeze them as well..

Heat oil in a wok.add rolls one by one & fry on medium heat.let it fry from one side then turn to other.

Take out from oil when fried.place on tissue or kitchen towel to remove excess oil.serve with any sauce.I serve with ketchup & mayonnaise.enjoy
