Peel skin.of lotus root then cut into circles.Submerge into vinegar water so that the color will not turn black

Fry peanut let it cool then remove skin

Sautee ginger garlic then the chilli and peppercorns.Add lotus root the sauce and a half small bowk of water.Simmer and cover until lotus root are tender.
