Steps

Cube red onion. Crush garlic. Slice peppers into thin strips. Peel tomatoes and chop. Cube chicken.

Cook pasta and cover until remainder finished

While cooking pasta, brown chicken in a lidded frying pan using 1tbsp olive oil.

Add onions and garlic and soften.
- 5
Add tomatoes and peppers. Mix into chicken and onions.

Add the chicken stock and wine. Cover and simmer until liquid reduced by about 2/3rds
- 7
Toss in the pasta to the mix until coated. Serve with lots of black pepper and the remaining bottle of Pinot!
