Cooking Instructions

Prepare the mitarashi an: Pour the ● water into a pan. Add the dashi kombu and let it sit for 15-30 minutes.

Add all the other ● ingredients to the heated saucepan. Using a rubber spatula, stir and cook the mixture until it becomes thick and transparent.

Making the dango: Add the measured water into the dangoko. Knead well until it's as soft as your earlobes.

Shape into balls about the size of your thumb.

Place them into the boiling water. When they float up to the top, boil for another 2-3 minutes. Transfer to iced water to finish!

I served mine with boiled adzuki beans, and kinako besides the usual mitarashi an. Enjoy with your favorite sauce.

I revised the amount of mochiko and tofu to make it myself.Even if it hardens in the fridge, it only needs ten or twenty seconds in the microwave to become soft again. This made it much easier to make the dango than grinding the rice in a mortar. By putting the rice in a plastic bag, I was able to play with my child while making the dango. My daughter helped me a little bit too.Mash the rice until they lose shape. You can also enjoy this dango coated in kinako powder or with azuki bean paste instead of mitarashi sauce.
