Ingredients

  1. 1 1/2 cup basmati rice cooked
  2. 2 cupchopped vegetables (cauliflower, cabbage, carrot, French beans, potato, green peas)
  3. 1onion chopped
  4. 2tomatoes chopped
  5. 1 tsp ginger
  6. 8 garlic cloves
  7. 1green chilli chopped
  8. 1/2 tspKashmiri chilli powder
  9. 1 tspcurry powder
  10. 2 Tbspcooking oil
  11. To garnish
  12. 6-7fried cashews
  13. 3 tspGreen coriander leaves
  14. as neededFried home-made cheese
  15. 1 bowlcurd
  16. handfulAloo bhujia
  17. 1 tspcumin seeds
  18. Whole Spices
  19. 2green cardamom
  20. 1 inchcinnamon stick
  21. 3cloves
  22. 5black peppercorn
  23. 1mace

Cooking Instructions

    Arrange the ingredients.

    Heat oil on a kadhai. Add cumin seeds and whole spices. Saute on low flame till aroma could come.

    Add chopped onion and green chili and saute till translucent.

  4. 4

    Crush the ginger, garlic with a pestle and add to kadhai.

    Mix and saute with onion.

    Add the chopped veggies(except cabbage), mix and cook till half done.

    Now add chopped tomatoes and cabbage and cook till tomatoes, softened.

    Add chili powder and curry powder and mix well.

    Add the cooked basmati rice and mix well carefully. Add the required amount of salt also.

    Cover and cook for five minutes. Serve by garnish with fried homemade cheese and green coriander with curd and Aloo bhujia.
