Cooking Instructions

In a skillet over medium heat, add oil and sauté the onion, then add the ground beef, spices, and pine nuts. Cook until the meat is browned and the mixture is fragrant.

To prepare the dough: Finely grind the beef using a meat grinder along with ice cubes and the bulgur (which has been soaked for at least 6 hours), until you get a smooth, cohesive dough.

Spread the first layer of kibbeh dough evenly in the bottom of a baking dish greased with clarified butter (ghee).

Add a layer of the meat filling, then top with the second layer of kibbeh dough, spreading it with wet fingers to make it easier to handle.

Cut the kibbeh into portions before baking, brush the top with clarified butter (ghee), and bake in a preheated oven at 350°F (180°C) until the meat is cooked through and the top is golden brown.
